Ingredients (Serves 4):

  • 500g ground beef (20% fat for maximum juiciness).
  • 1 tsp sea salt + ½ tsp freshly cracked black pepper.
  • 1 tsp finely ground coffee (the secret to deep flavor!).
  • brioche buns, lightly toasted.
  • 1 large onion, thinly sliced.
  • ¼ cup mayonnaise + 2 tbsp BBQ sauce.

Steps:

  1. Mix the beef with salt, pepper, and coffee (avoid overmixing to keep it tender).
  2. Shape into 4 patties (1.5cm thick; use a ring mold for perfect edges).
  3. Sear the patties:
    • Heat a cast-iron skillet on high.
    • Cook patties 3 minutes per side for medium doneness (160°F internal temp).
  4. Toast the buns in the skillet for 30 seconds.
  5. Assemble:
    • Spread mayo and BBQ sauce on the bun.
    • Layer patty, caramelized onions, lettuce, and tomato.
