Ingredients (Serves 2):

  • ribeye steaks (3cm thick).
  • 1 tbsp mayonnaise.
  • 1 tsp coarse sea salt.
  • ½ tsp black pepper.
  • 2 sprigs fresh thyme.
  • 3 tbsp butter.

Steps:

  1. Prep: Let steaks rest at room temp for 30 minutes.
  2. Coat: Brush steaks with mayo; season with salt and pepper.
  3. Sear:
    • Heat skillet on high. Cook steaks 3 minutes per side.
    • Add butter and thyme; baste steaks for 1 minute.
  4. Rest: Tent with foil for 5 minutes before slicing.
