Ingredients (Serves 4):
- 500g ground beef (20% fat for maximum juiciness).
- 1 tsp sea salt + ½ tsp freshly cracked black pepper.
- 1 tsp finely ground coffee (the secret to deep flavor!).
- 4 brioche buns, lightly toasted.
- 1 large onion, thinly sliced.
- ¼ cup mayonnaise + 2 tbsp BBQ sauce.
Steps:
- Mix the beef with salt, pepper, and coffee (avoid overmixing to keep it tender).
- Shape into 4 patties (1.5cm thick; use a ring mold for perfect edges).
- Sear the patties:
- Heat a cast-iron skillet on high.
- Cook patties 3 minutes per side for medium doneness (160°F internal temp).
- Toast the buns in the skillet for 30 seconds.
- Assemble:
- Spread mayo and BBQ sauce on the bun.
- Layer patty, caramelized onions, lettuce, and tomato.
Chef’s Tip:
“Coffee enhances the beef’s umami—no grill required! Just a hot skillet.
