Ingredients:
- 4 salmon fillets
- 1 cup fresh spinach, chopped
- 1/2 cup cream cheese, softened
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Lemon wedges for garnish
Instructions:
- Preheat your oven to 375°F (190°C) and line a baking dish with parchment paper.
- In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- Stir in the chopped spinach and cook until wilted, about 2 minutes.
- In a bowl, combine cream cheese, Parmesan cheese, and the sautéed spinach mix. Season with salt and pepper to your liking.
- Place the salmon fillets on a clean surface. Carefully cut a pocket in each fillet without cutting all the way through.
- Generously stuff each salmon fillet with the creamy spinach mixture.
- Place the stuffed salmon in the prepared baking dish and bake for 20-25 minutes, or until the salmon flakes easily with a fork.
